I've just been using %{__make} in my custom .spec for some time
now.  Never figured out why it *poofed* on SMP builds.  Sorry I
neglected to share the joy, er lack ther of, as Bamm has.

On a 1-core laptop now so 'rpm --eval %{?_smp_mflags}' means
nothing...  Try it on a multicore? or true SMP box and see what you
get.
