Sybex's "Security+ Study Guide" is an excellent book that really is more of a classic "text book" then a "test prep" book. It's a good 500 page introduction to information security.

I have been asked to teach a Security+ class at a local Community College and need to pick out a textbook. I know there are lots of Test Prep books but want something geared more towards teaching the class. Any suggestions?
