If you will be working with VMWare, they have a free converter called 'P2V' (physical to virtual?):

Other than that, you can look into simple tools like 'DD' http://en.wikipedia.org/wiki/Dd_(Unix) to perform data dumps between partitions, disks, or even over the network using 'NC' http://en.wikipedia.org/wiki/Netcat to perform forensics.

Also, look at Penguin Sleuth & Autopsy http://www.linux-forensics.com/, they even have a VMWare Virtual Appliance http://www.vmware.com/vmtn/appliances/directory/249
