 Check out www.sans.org.  It's the place for security training stuff.
I've never taken any course materials from there but have done some
research from other parts of the site.

Just my $.02, your mileage may vary, batteries not included, etc....


I would say sans is probably the best sec.training course on the market, from experience my colleagues have had there, and at other institutes. This is also just my .02, but they should definitely be in the top 3 of your list.
