 Go to www.sans.org and look into their @Home stuff.   I believe  
their SEC504, Hacker Techniques, Exploits, & Incident Handling is  
offered through this program and I understand it is a good course.

If you happen to be located in the DC area SANS Tysons Corner is the  
end of March and there are two different courses of this nature being  
offered including a brand new course SEC560 Network Penetration  
Testing and Ethical Hacking is being offered and I have signed up for  
that one.

I have no affiliation with SANS what so ever other than being fond of
