Serving which kind of content? Static files big or small, CGI-BIN
generated content, FCGI, PHP via module, kernel-space ASP, etc?

Sometimes you have external constraints (e.g. when VB-scripts and Access
database are needed, IIS pretty much is the only choice), but usually
the problem is not the web server, but the active content.

My latest test with unix web servers with respect to static files was:
        apache 1.3      fastest
        thttpd          second by a veryvery small margin
        apache 2.0      
        boa             

On a 333MHz/128MB box I was able to serve above 80 Mbit/s of static
files this way (tested with siege and 250 concurrent users), on a 1,3GHz
system more than 450 Mbit/s. 

So I'd suggest that the web server itself usually is not the bottleneck.
Think along I/O capacity (hard disc configuration) and especially
optimize (server side) active content!
