Hi Scott, 
Few questions before I let myself "flow":

1. You mentioned that you are about to pentest a physical sec. system for a 
company that is integrating IT & physical security.
Are you about to pentest a product of that company, or is it the companys 
itself security systems (my guess, it is the first one).

2. I need some hints about the system architecture. expand that "etc." - what 
else except cameras and gates is there ? 
for example - access control - what is it based on ? RFIDs ? magnetic cards ? 
human optical device (that is, a guard that just glances at an ID card) ?
another example - fence. is there a geographic secured perimeter or a building 
? it can have meaningful consequences.
last example (as you are starting to get the idea) - emergency systems. either 
fire alarms or fire stairway is a good starting point.
