It's easy. Use an EEPROM programmer.

On "write protected" BIOSes all you have to do is figure out which pin is write_enable (get a pinout from the web) and figure out if that pin goes to +5v or ground to do what you want. Jumper accordingly.

However, on most motherboards I've encountered, the BIOS is writable .. just boot to a minimal OpenDOS disk (or linux counterpart).

There are a lot of hacks out there for BIOSes .. the Linux BIOS project for example, or the ways you can get your non-raid IDE controller to do raid by installing the retail BIOS for the RAID version of the same chipset.
