Unless its running through an actual print server (computer not jetdirect) I think your best bet would be to simply open a browser and type in the jetdirects IP address, this will bring up the web console for it and it may have some logging functionality in there, All our stuff goes through a computer print server and I've not had a need to use logging on a standalone net printer.
