I can give you a few data points:

Forensic consultants typically charge between $300 - $800 per hour 
for a case. But these rates are for experienced analysts with 
credentials and evidence collection and presentation experience.

If the client is looking for assistance setting up an incident 
response policy and procedure they may be able to get by with less 
experienced professionals, but if the client expects to create a 
case that is defensible and will hold up in court, expereince in 
front of the court process goes a long way. 

It may seem unfair that "equally skilled" professionals cannot 
command $700 - $800 / hour, but in my experience I have found that 
forensic experts with court experience charge "the big bucks." 

Hope this helps - I don't claim this to be a complete representation 
of the market but it is what I have seen.
