I have a number of years of experience in IT security
and the bootcamps are great ways to consolidate all
this information and frame it for me in terms of the
exam.

If you've got plenty of experience, then the bootcamps are a quick way to just 
touch up and remind you of a few topics.

I honor your opinion but from my experience the
bootcamps I've taken were not a shortcut to
certification, but a great review session. 

Having taught bootcamps I know they can be a review.  The problem that I have 
with them is that the exam tends to be given a day or two after the review 
completes.  I suspect the days of the 10 year+ veterans who are only just 
finding  out about the CISSP are pretty much over.  Most of the people I see in 
classes have 4-7 years experience, and have likely concentrated on one or two 
areas  (networking is the most common).  These people will probably have 
touched on all 10 domains, but not necessarily in depth.  Proper review 
seminars for the CBK  are not courses: you can't "teach" four years worth of 
experience in a week.  The  seminars are intended to identify areas of security 
where you are weak, and what you need to study up on before the exam.  I 
generally recommend 4-6 weeks between seminar and exam.

I've met
some pretty amazing people who were also in my classes
and having others like me to bounce ideas off of and
learn from has been extremely beneficial.

This is, of course, one of the best resources applicable to any kind of course. 
 It's yet another reason to avoid the bootcamps, though.  If you take a review 
seminar in your local area, you will be able to use the people you meet, and 
possibly form a  local study group leading up to the exam.
